Chocolate zucchini mud cake

Chocolate zucchini mud cake- vegan & gluten free

This cake is one of my favourite! Its very moist from the zucchinis and a dark rich flavour from the raw cacao. First time making it, I almost ate the whole cake in one sitting! Please make it so you understand me :) 


2 1/2 c gluten free oat flour

3/4 - 1 c coconut sugar

3/4 c raw cacao

1 tsp baking powder

3 tbsp coconut oil

1 c water

2 c grated zucchini

1 pinch of salt

1 tsp vanilla bean powder

Mix everything in a bowl. Line a 20cm round baking tin with parchment or coconut oil and preheat the oven to 375F (175C) Bake for about 30 min. Enjoy!!
