Vegan Mac'n Cheese

I absolutely love Mac'n Cheese and it has taken me several experiment to make the perfect recipe! Finally I can share my favourite dish for you guys. This recipe is so easy and you can make your Mac'n Cheese in only 10 minutes!  This Mac'n Cheese is made of cashews and Nutritional yeasts. . 

First soak your cashews in water overnight.

While your pasta of choice is boiling, process the cashews with the rest of the ingredients in your food processor until very smooth.

When your pasta is done, turn of the stove and rinse the water, but not all of it! leave a 1-2 tbsp of water in the pot and add your "cheese" with the pasta. Stir the mixture until the pasta have absorbed the cheese. Done!

I think it tastes really good with cherry tomatoes and leek. However, go wild! you may add green peas, broccoli, spinach.... 



1 cup of gluten free pasta (your choice)

1 cup raw cashews (soak in water overnight)

1 tsp sea salt

3 tbsp Nutritional yeasts

1 tsp tumeric

1 tsp red pepper (smoked red pepper)

1/2 tsp chili flakes (optional)

1/2 tsp black pepper


1. Boil pasta and while they are cooking, make the "cheese"

2. Blend all the ingredients (except pasta) in a food processor or Vitamix until it becomes smooth/ powder. 

3. Strain the noodles but leave 1-2 tbsp of pasta water in the pot.

4. Put the pasta back into the pot and add 3 tbsp of your cheese. The amount depends how much cheese you want with your pasta. It should get creamy!

5. Mix and enjoy :)
