LEMON AND FIG CAKE

Spring is coming and what is not better than a fresh raw cake with flavors of lemon and figs. This cake are one of my favorites! so easy to make, can be done under 10 minutes if you have a food processor. As a topping, you can of course use whatever you like,  figs or as I did, a lot of berries. Either way, you can not fail. Good luck!

Ingredients:

Crust:

1 cup dates

1/2 cup almonds

2 tbsp desicated coconut

Filling:

2 cup cashews (soaked overnight)

1/3 cup melted coconut oil

1 cup dried figs

Juice of 1 lemon

1/2 cup water (or as much as you need)

1/4 cup maple syrup

Instructions:

1. Place the ingredients for the crust in your food processor with a little bit of water and pulse to chop until it is to your desired texture. Test the crust by spooning out a small amount of mixture and rolling it in your hands, If the ingredients hold together, your crust if perfect. Add the crust mixture in a 7' spring form or pie plate, press firmly, making sure that the edges are well packed and that the base is relatively even throughout. Rinse food processor well for the filling. 

2. Add all the ingredients for the filling in your food processor and blend on high until smooth. This can take few minutes. 

3. Pour the filling on the crust and smooth with a spatula. 

4. Place in freezer until solid. Best overnight and then remove from freezer 2h prior to eating. Add any topping you want, berries, dried or fresh fruit. Enjoy!
