Vegan & gluten free crepes/pancakes

I was really craving some pancakes today with soy whipped cream. They turned out really good with some fresh strawberries. Let's make them! 

Ingredients:

1 cup buckwheat flour

3 tbsp potato starch

2 tbsp coconut sugar

pinch of salt

pinch of real vanilla pod

1 tsp melted coconut oil (optional)

1/2 c vegan milk

1 1/4 water

Instructions:

In a bowl, whisk together all the dry ingredients. Then add the wet ingredients and whisk it all together. 

Heat a pan with a little bit of coconut oil. Make sure the pan is hot before you add the batter, or else the batter will stick and ruin the pancake.
